Ingredients:

8 ounces (226 grams) uncooked pasta of your choice (e.g., penne, spaghetti, farfalle)
2 tablespoons butter
2-3 cloves garlic, minced
2 tablespoons tomato paste
1 (14.5-ounce) can (411 grams) crushed tomatoes
¾ cup heavy cream or milk
¼ teaspoon Italian seasoning
Salt and freshly grated parmesan cheese, to taste

Instructions:

Cook the pasta according to package directions until al dente (slightly firm to the bite). Drain and reserve about ½ cup (120 ml) of the pasta water.
While the pasta cooks, melt butter in a large skillet over medium heat. Add the minced garlic and cook for about a minute, until fragrant.
Stir in the tomato paste and cook for another minute, allowing it to caramelize slightly.
Add the crushed tomatoes, heavy cream (or milk), and Italian seasoning. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
Season the sauce with salt and pepper to taste. You can also add a pinch of sugar to balance the acidity if desired.
Toss the cooked pasta with the sauce in the skillet. If the sauce seems too thick, add a splash or two of reserved pasta water to loosen it up.
Serve immediately with freshly grated parmesan cheese and enjoy!

Tips:

For a richer sauce, you can use full-fat heavy cream instead of milk.
Add a pinch of red pepper flakes for a bit of spice.
Leftover cooked vegetables like chopped spinach, broccoli florets, or peas can be added to the sauce for extra flavor and nutrients.
This recipe is easily customizable. Play around with different herbs like oregano, basil, or thyme to create your own variation.
