Hello everyone, I am very happy to be able to participate in SLC S21 Week 3 in my area of Indonesia there are many common spices that are easy to find here we always use these spices in our regional cuisine which is full of spices so in my place it is very easy to find because spices are kitchen necessities besides that dishes that are rich in spices also have many benefits for the body and also to make our cooking more delicious without having to use flavor enhancers
Here I will share 1 recipe for my regional cuisine that uses spices from my region, here we call it (kuah teucrah) or Acehnese curry. I will use milkfish that I cook with my regional spices.

5 red chilies
4 cayenne peppers
a piece of turmeric
a piece of ginger
1 tsp pepper
1 tsp coriander
5 dried starfruit
2 pandan leaves

The first step is to marinate the fish with lime juice and salt, let it sit for 3 minutes until everything is absorbed.
After that, prepare the fine spices, including shallots, garlic, pepper, coriander, ginger, turmeric, cayenne pepper, red chili and Acehnese tamarind. Blend all these spices in a blender.
- After that, prepare a pan, pour in a little oil, then sauté the curry leaves, pandan leaves, lemongrass and sliced shallots until slightly wilted. During the sautéing process, it gives off a very fragrant smell. Here, we often use this as an aromatic in food.
- then add the ground spices, then add 300 grams of marinated milkfish, add 300 ml of water, stir briefly until all the spices are evenly mixed and also add 1 tablespoon of finely ground coconut as a natural flavoring.
- Cook for about 20 minutes on medium heat and add 1 tsp of salt then check the taste to see if it is right if it is, turn off the stove and let it cool

Shallots are one of the kitchen spices that are very necessary in cooking food. Shallots also have many benefits that are good for the body, namely they can improve heart health, lower blood sugar levels. Shallots also have anti-inflammatory properties and are rich in antioxidants.
Garlic is also equally important in the world of herbs and cooking, which has many benefits for the body, including improving brain function, improving digestion because garlic will fight bad bacteria and protect the good bacteria in the intestines.
Coriander is also equally important for cooking and herbs have good benefits for the body, including reducing LDL or bad cholesterol because coriander is rich in antioxidants, using coriander in cooking can make food taste better and be healthy for the heart.
White pepper is one of the spices that must be in the kitchen. One of the functions of pepper is as a natural antimicrobial. White pepper is also good for digestion.
Red chili is one of the ingredients that is often used to make food a little spicy, but the taste of red chili itself is not too spicy, unlike cayenne pepper. Red chili has benefits as, the capsaicin content in chili is healthy for the heart, acts as an anti-cancer.
Cayenne pepper is almost the same as red pepper, but cayenne pepper has a spicy taste, its benefits are also almost the same, the capsaicin content in cayenne pepper helps to lose weight.
This dried starfruit is a typical spice from our region, Aceh. All typical Acehnese dishes use this ingredient. Starfruit is also good for health, including managing high blood pressure and speeding up wound healing.

- Star anise is a kitchen spice that exists in the herbal world. Star anise functions as an antidote to bacteria because star anise contains anethole.
How to use star anise in cooking: We can add star anise to soup dishes and also sauté the flowers at the start of the cooking process as an aromatic.
- This nutmeg is one of the kitchen spices that I often use in my cooking. The benefits of nutmeg can improve sleep quality, prevent bacterial infections and maintain dental health.
Using nutmeg in cooking, you can grate a little nutmeg and add it to dishes such as curry, soup and other meat dishes.
