Hello everyone, I am very happy to be able to participate in SLC S21 Week 3 in my area of ​​Indonesia there are many common spices that are easy to find here we always use these spices in our regional cuisine which is full of spices so in my place it is very easy to find because spices are kitchen necessities besides that dishes that are rich in spices also have many benefits for the body and also to make our cooking more delicious without having to use flavor enhancers

Here I will share 1 recipe for my regional cuisine that uses spices from my region, here we call it (kuah teucrah) or Acehnese curry. I will use milkfish that I cook with my regional spices.



Ingredients:

300 grams of cleaned milkfish
lime
2 tsp salt



ground spices:

5 cloves of shallots
3 cloves of garlic
5 red chilies
4 cayenne peppers
a piece of turmeric
a piece of ginger
1 tsp pepper
1 tsp coriander
5 dried starfruit



sauteing ingredients

1 stalk of lemongrass, crushed
2 pandan leaves
curry leaves
sliced ​​shallots

You can boil this cinnamon with a little water because cinnamon is aromatic.

you also saute this cinnamon with a little coconut oil at the beginning stage of cooking sauteing until the cinnamon gives off a fragrant smell



Turmeric as a flavor enhancer in cooking. How to add it: You can grind the turmeric or grate the turmeric.

Turmeric is also a natural yellow dye to enhance the color of cooking.



The use of shallots in cooking is usually sliced ​​shallots for sautéing at the start of the cooking process.



How to use star anise in cooking: We can add star anise to soup dishes and also sauté the flowers at the start of the cooking process as an aromatic.



Using nutmeg in cooking, you can grate a little nutmeg and add it to dishes such as curry, soup and other meat dishes.



I will make 1 detox drink that I learned from a herbal doctor expert in my area

materials:

2 thumbs of ginger
1 thumb turmeric
galangal 1/3 of turmeric
1 stalk of lemongrass
lime / lemon
honey (optional)
