Hope all of my dear friends of this nice community are very well by the mercy of Almighty Krishna and so am I. I have come to my parents from my in-lows house yesterday and will stay here few days. So I am so happy now. Today I am going to share delicious eggplant and tomato with you. It is a very special and quick recepie for this winter season. Let's start cooking without delay...
REQUIRED INGREDIENTS

Green chili

1 teaspoon
Salt
2 teaspoon
Turmeric powder
1.5 teaspoon

PROCEDURE
STEP 1
At first cut the eggplant and tomatoes into small pieces. The pieces should be sliced thinly. Wash the vegetables thoroughly. Also slice the green chilies and chop the corianders. Wash these thoroughly before cutting.
STEP 2
Place a pan on the stove and let it being hot. Pour required amount of oil in it. Keep the temperature medium. When the oil is hot add 1 teaspoon of mixed seasoning spices in it. After turning its color brown add the chopped eggplant and tomatoes in the pan and mix well. Add the sliced green chilies also and mix.

STEP 3
Cover the vegetables for 3-4 minutes for being softer. Then add 2 teaspoon of salt and 1.5 teaspoon of turmeric powder and mix. Add little water and again cover this. Remove the cover after each several minutes and stir the vegetables so that these are cooked well and don't get attached with the pan surface.
STEP 4
When the vegetables become soft enough add a small amount of water. Don't pour so much water. When the curry start boiling add the mixed hot spice(cinnamon, cardamom, black pepper, cloves) in it and mix well. After boiling of 4-5 minutes turn off the stove. Then add the chopped coriander and mix with the curry. And the curry is ready to serve.
