Tomato Tango Salad

Hmm! Tomato Tango Salad. That name tastes good already. But in case you also love that name. I just made it up for this starter dish.

At first, I could not say I have prepared a 3-Course menu mainly because I did not know what it was all about. But when I researched on it, I found out it was food presented in three batches. The first one awakens your appetite, followed by the main food that takes care of hunger and finally, something to rinse it all down.

With these, I can say that I have prepared a 3-Course meal in a traditional way but not as a chef.
Traditionally it is expected that while you are cooking and the family is waiting. You are to present some tapioca with grilled groundnuts or a hot sauce. I wish to call this the starter. It would be followed by the main fufu and soup and finalized with a bottle of fresh palm wine as the desert.

The picture above shows a traditional starter meal consisting of tapioca, rosted fish and a hot sauce.
I use this starter when feeding guest in the traditional way during a traditional marriage or other traditional events.

For a salad as a starter dish, it will be ideal when hosting guests for a statutory marriage, what we locally call a white wedding or any formal gathering.

I would present my tomato tango salad as the appetizer, it would be closely followed by rice and lentil stew, then rinsed down with watermelon-pineapple-smoothie infused with a small hint of clove.
